A unique cheddar style cheese made from 100% goat’s milk and the only one of its kind to be matured in caves in the UK.
For a unique flavour
Matured in Wookey Hole Caves, Somerset.
Cave Aged Goats Cheese is a deliciously mild, savoury, firm cheese which is similar to a traditional cheddar in texture but with a distinctive yet subtle ‘goat’ flavour. The Cave environment adds yet another dimension to the ageing process. The year round constant 12 degrees centigrade and humidity bestows the cheese with the added benefit of rich, earthy and nutty flavours with caramel top notes.
Artisanal Techniques
Cave Aged Goats Cheese is made using British goats milk using the same artisanal techniques as the Farm’s multi award-winning Cave Aged Cow’s Milk Cheddar. Utilising the traditional recipes and methods that date back many centuries.
Awards
Goat’s Cheese has picked up a string of awards including a Super Gold and the title of Best British Cheese at the World Cheese Awards 2016, a Gold at the 2017 British Cheese Awards and a Gold and Silver at the 2017 International Cheese Awards.
Pairing Notes
A young, fresh white wine with good acidity is great match with this mild, savoury cheese with just enough goaty notes! Perhaps a Sauvignon Blanc from the Loire in France like Sauvignon Blanc, Vigneron de Valencay or maybe a Gruner Veltliner from Austria such as Lois GV, Weingut Fred Loimer.
